Strawberry Shortcake

I love how delicious and flavorful all fruit is during the summer.  I bake through this intense heat with practical quick desserts that capture the summertime.  One of my favorite summer desserts is strawberry shortcake.  I learned to make this dessert back in culinary school and it has been a part of my cooking arsenal for years. I love this southern spin on this dish by baking biscuits. This recipe can quickly become a new addition to any one's baking rotation.  

Ingredients
1 1/2 pounds strawberries, stemmed and quartered
5 tablespoons sugar
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda 
2 tablespoons sugar
3/4 teaspoon salt
1 1/2 cups heavy cream

Whipped Cream:
1 1/2 cups heavy cream, chilled
3 tablespoons sugar
1 1/2 teaspoons vanilla extract
1 teaspoon freshly grated lemon zest

Directions
Mix strawberries with 3 tablespoons sugar and refrigerate while juices develop, at least 30 minutes.

Preheat the oven to 400 degrees F.

Sift together the flour, baking powder, baking soda, remaining 2 tablespoons sugar, and salt in a medium bowl. Add heavy cream and mix until just combined. Roll dough out onto floured surface, form it into a rectangle.  3 inches tall by 8 inches long.  Slice down the middle then slice diagonally to create triangles.  Yes, I used a wine bottle to roll the dough out. Place mixture on an un-greased cookie sheet and bake until golden, 18 to 20 minutes.

Spoon some of the strawberries with their juice onto each shortcake bottom. Top with a generous dollop of whipped cream and then the shortcake top. Spoon more strawberries over the top and serve.

Whipped Cream:
Using a mixer, beat the heavy cream, sugar, vanilla, and lemon zest until soft peaks form, about 1 1/2 to 2 minutes.



Beauty Time-Yogurt Hair Mask

With summer humidity my hair could use a big a little pick me up.  My go to mask is made up of ingredients I keep in my home making this easy to fix up.  This mask leaves my hair soft, gives a good dose of protein, has cleansing qualities from the essential oil used, the honey adds shine and the citrus helps naturally brighten my locks.  I felt like I had just had a deep conditioning treatment at a professional salon after washing it out of my hair. 

1/4 cup of Greek yogurt

3 drops of tea tree oil

Juice from half a lemon

2 tbsp of coconut oil

1 tbsp of honey

In a blender combine all ingredients until smooth.  Apply to your hair in sections, starting from root to tip. Any remaining mixture concentrate on adding to ends.  Pin hair up, for extra concentration wrap a towel around to help the mixture penetrate your hair.  Allow the mixture to almost feel completely dry (about 30 minutes).  Rinse mixture out of hair, shampoo and condition normally.  Style as usual.

A Livley Sparkler-Cherry Gin and Ginger Cocktail

Over this holiday weekend I will be drinking this delicious and refreshing cocktail.  I make my own ginger honey syrup(it is much easier than you think). Happy 4th and enjoy yourself!

Honey Ginger Syrup-

2 cups of water

3 tbsp of grated ginger

1/2 cup of honey (Ruse Goods Raw Honey is my favorite of course)

Combine all ingredients into a saucepan and bring to a boil. Reduce to a low simmer for about ten minutes.  Strain contents and cool to room temperature. 

To make the Lively Sparkler-

1/2 cup of unsweetened cherry juice

2oz of ginger honey syrup

2oz of gin

Splash of soda

Lime to garnish

Combine all ingredients except soda into a shaker, shake vigorously for about ten seconds. Pour contents into a glass with ice filled half way up.  Top with a splash of soda and lime, Cheers!


Travel Photo Diary

This past month has been wonderful.  I traveled west to Ojai for a wedding, back to Chicago for my brother's birthday and visited Cape Cod for the first time.  Two of the places I have never been and I know I will be going back to both. 

Before I drove to Ojai I spent a couple of days basking in Los Angeles sunshine.  I reconnected with old roomies, had a cocktail party hosted at my gal Adrien's amazing new place where we sampled my honey and I had a bestie day with the beautiful and recently engaged Lyndsay.

While in Ojai, I stayed at the Ojai Valley Inn and Spa.  The accommodations were lovely and the wedding was spectacular.  I was overjoyed to be a part of the beautiful union of two of my favorite people. My darling Jess was a stunning bride and I loved my fellow bridesmaids.

It is not everyday your baby brother turns 21!!! I stopped in Chicago on my way back to New York to toast him on his big night and of course fit in some time to play a little mini golf with my niece and nephew.  I am so happy I was a part of this day, I can't believe how fast the time has gone.  Love you my little bumblebee.

Cape Cod was just the thing I needed to catch up on my rest. A close destination for relief from city life, this place is a must see on my list.  I stayed in Yarmouth Port with dear friends and had myself a relaxing and enjoyable time.  We lounged at the beach, cooked dinners at home, asked each other a million questions around a fire at night and breathed in the fresh air during our mini day trips to towns.  

I feel rested, blessed and know I have more stories to share than hours in the day.  I hope these photos inspire you to take your own travels, savor each moment and share your joys with those you love. 

Honey Cupcakes

I am a blessed woman to have the love and support of my family and friends(who are just an extension of my own family).  One of my nearest and dearest friends Adrien is a jack of all trades.  She and I met several years ago in Los Angeles fresh out of college.  We both share passions for many things and have had helped encourage one another over the years.  Adrien recently purchased a bottle of my honey and used it in a delicious cupcake recipe. Not only did she make the cupcakes, she photographed the whole process.  Adrien has taken many photos of me, for me and of many others over the years.  She has an impeccable eye and I feel honored she took the time to take such beautiful shots. From photography to baking, there is nothing this lovely lady can't do.
